Chef is a believer in eating local

Instead of becoming an engineer, he switched gears, going to culinary school and opening his first restaurant in West Hurley, Ulster County. In 2003, he decided to shake things up by moving the restaurant to Rhinebeck, where Terrapin features both fine dining and a more affordable bistro, both of which highlight locally grown, high-quality ingredients.
